Lambs are allowed to mature a little more before their meat is taken, as their range is usually between 6 months to a year.

Perhaps the only similarity they share in preparation is that they’re both made to be very tender. However, veal is typically only cooked a certain way. Because it’s so tender, you wouldn’t necessarily need to separate it into cooking styles like medium rare and well done. Lamb chops, however, can be cooked in a variety of ways depending on the dish you use them for.
While both lamb and veal chops are designed to be tender, the way they taste is a little bit different. Lamb chops tend to have a much stronger taste than veal chops, which require them to be seasoned more to combat that. Veal chops don’t need to be as heavily seasoned because their flavor isn’t as strong. Both meats sport the same level of tenderness, and they are far more tender than their adult counterparts.
